There they were… on my counter… 3 super ripe bananas just begging “use us… use us…”.
Proud to present my lovely Banana Muffins! My little kick here is the maple syrup, a perfect match for the walnuts!
Ingredients – for 12 muffins
Dry:
- 1 cup whole wheat flour
- 1 cup regular flour
- 1 cup brown sugar
- 2 tsp baking powder
- A pinch of salt
Wet:
- 3 ripe bananas
- 2 spoons maple syrup
- 1/3 cup canola oil
- ¼ cup almond milk (or any other non-dairy milk)
Plus:
- ¼ cup vegan chocolate chips
- ¼ cup walnuts – I broke mine with my hands, medium chunks
Directions:
- Preheat oven to 200c/400f
- Mix all dry ingredients in a bowl and set aside
- In a second bowl – mash the bananas with a fork – leave no chunks
- Add the maple syrup and mix well
- Add the oil and mix well
- Add the chocolate chips and the walnuts – mix well
- Add the milk and… yes, mix well
- Mix both bowls together – I used a long teaspoon
- Line a muffin form (12, remember?!) with paper liners
- Fill the muffins liners with a spoonful of the mix
- Add a whole walnut on the top
- Bake for 25-30 minutes – once the top walnut is brown you can stick a toothpick and make sure it comes clean
- Let cool for at least 20 minutes before nom nom nom nom them! (letting the cat watch them cool is not recommended!)
